  • Spinach Kugel

    Ingredients

    • 1 Bag noodles
    • 1/2 gal liquid eggs
    • 2 lbs melted butter
    • 5 lbs sour cream
    • 5 lbs cottage cheese
    • 4 packet onion soup mix
    • 1/4 cup black pepper and salt mix
    • 4 boxes chopped spinach thawed and squeezed dry

    Directions

    1. Preheat oven to 350 degrees F. Grease a baking pan.
    2. Fill a large pot with lightly salted water, bring to a rolling boil over high heat. Stir in noodles, and return to a boil. Cook the pasta until cooked through, but still firm to the bite, about 5 minutes. Drain well in a colander det in the sink.
    3. Combine the eggs, melted butter, sour cream, cottage cheese, coup mix, and salt/pepper mixture in a large bowl. stir in the cooked noodles and drained spinach. Spoon into prepared baking dish.
    4. Bake in preheated oven until hot and golden brown, about 60 minutes. Cover dish with aluminum foil if kugel begins to brown too quickly.
