    Spinach Casserole II

    Fairly easy prep for this yummy casserole.

    Ingredients

    • 10 oz. chopped spinach, thawed
    • 1-2 minced scallions
    • 3 beaten eggs
    • 1/2 C small curd cottage cheese
    • 1/4 tsp. seasoned salt
    • 1/8 tsp. pepper
    • pinch nutmeg
    • dash Tabasco
    • 2 T sour cream - low fat ok
    • 2 T fine bread crumbs
    • 1/2 C shredded Parmesan cheese
    • 1/2 C Italian blend or other white cheese, shredded
    • garnish: paprika

    Directions

    1. Heat oven to 350.
    2. Grease an 8x8 or 9x9 baking pan.
    3. Squeeze spinach dry with paper towels.
    4. Mix all the ingredients together- except Italian blend - and pour into pan.
    5. Cover and bake 40-45 minutes.
    6. Turn off oven.
    7. Remove cover and sprinkle on Italian blend cheese and paprika.
    8. Place back in oven for 5 minutes.
