Spinach Balls
Found this on the web at mydailymoment.com and decided to give it a try since I love spinach. It was easy to prepare but I don't think I got the spinach fully defrosted and "squeezed dry." I overcooked them by at least 10 minutes and they never did get bound together tight. I think it was the water so I have not yet modified the recipe. It was tasty but a bit too much cheese for me (I usually don't like a lot of cheese so I won't change that either. Ingredients
- 6 eggs lightly beaten
- 6 oz stuffing mix
- 1/2 cup butter or margarine, melted
- 1 cup grated Parmesan cheese
- Salt and Pepper to taste
- 20 oz frozen, chopped spinach, thawed and squeezed dry
Directions
- In a mixing bowl, combine eggs, stuffing mix, butter, Parmesan cheese, salt and pepper.
- Add spinach and mix well.
- Shape into 1-1/2 inch balls and place on an un-greased baking pan.
- Bake at 350 for 12-15 minutes or until lightly browned.
