  • Spicy Kale Stew

    Ingredients

    • 2 bunches kale
    • 1 bunch escarole
    • 1 large white or yellow onion
    • 1 can coconut milk
    • 2 cups sliced mushrooms
    • 1 tbs Mrs Dash Chipole Seasoning
    • 1 tbs salt
    • 1 tbs ground black pepper
    • 2 chopped and seeded chili peppers (your choice of pepper)
    • 2 tbs olive oil
    • 2 minced garlic cloves
    • 1/2 cup heavy cream

    Directions

    1. Wash, de-vein and chop the kale.
    2. Wash and chop the escarole.
    3. Peel and dice the onion.
    4. Heat the olive oil in a large wok and add the diced onion.
    5. Saute until the onion is starting to soften.
    6. Add the garlic, seasonings and diced peppers.
    7. Stir again until the garlic is fragrant.
    8. Add the sliced mushrooms.
    9. Cook until the mushrooms start to brown.
    10. Add the coconut milk and stir well.
    11. Simmer for a few minutes.
    12. Add the kale and escarole by the handful, adding the next when the first is wilted.
    13. When all the greens have wilted stir in the cream.
    14. Serve with bread, potatoes or rice.
