Spicy Gorgonzola-Pine Nut-Herb Butter

You will love the richness of the butter on your steaks. Sometimes I use this recipe on bake potatoes. As a spread on french bread I bake in foil in the oven. Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup crumbled Gorgonzola or other herb soft cheese.
- 3 Tbls of fresh thyme, minced.
- 2 Tbls fresh rosemary, minced.
- 2 Tbls fresh Italian parsley, minced.
- 1 Tsp crushed red pepper flakes
- 2 garlic cloves
- 1/2 cup pine nuts
- Kosher salt and freshly ground pepper
- This is enough to use on 8 8 ounce beef tenderloin filets.
Directions
- Preheat you outdoor grill for medium to high heat.
- Place the softened buter, Gorgonzola cheese, thyme, rosemary, parsley, red pepper flakes, garlic and pine nutes into a bowl of a food processor. Puree until incorporated, taste, then season to taste with salt and pepper.
- Season the steaks on all sides with salt and cracked pepper.
- Grill to desired doneness.
