Spiced Zucchini And Peas In Tomato Sauce (Torai Masala)
Ingredients
- 1/2 c. Minced red onions
- 3 x Garlic cloves, chopped
- 1 x Celery rib, sliced
- 2 Tbsp. Canola oil
- 1/2 tsp Tumeric
- 1/2 tsp Cumin pwdr
- 3 c. Cubed zucchini
- 2 1/2 c. Tomato sauce
- 1 c. Frzn peas
- 3 pch Cayenne pepper
Directions
- Saute/fry onions, garlic, and celery in oil for 2 min.
- Add in tumeric, cumin and zucchini. Cook over medium heat for 5 min.
- Add in tomato sauce, peas and cayenne pepper and cook till zucchini is tender, about 15 min.
- HINT: Use minced fresh or possibly canned tomatoes instead of tomato sauce.
