    Spiced Sesame Bar Cookies

    Miniature chewy bars with a foreign and exotic flair make a special sweet with coffee or tea. Sesame seeds form a nut-like crust to bottom and top of the moist spicy bars. A little challenging to fill the pan without disturbing the bottom sesame layer, but a labor of love for a special occasion cookie.

    Ingredients

    • 1/4 cup toasted sesame seeds, divided
    • ½ cup sifted all purpose flour (or stir flour to aerate, then measure lightly)
    • 1/4 teaspoon salt
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon allspice
    • 1/4 teaspoon mace
    • ½ teaspoon cinnamon
    • 1 egg
    • 3/4 cup brown sugar (I used brown sugar blend)
    • 3 tablespoons butter, melted

    Directions

    1. Set oven to 350 degrees F. Grease an 8" x 8" baking pan and sprinkle with ½ of the toasted sesame seeds.
    2. In small bowl mix together flour, salt, baking soda, allspice, mace and cinnamon.
    3. Beat egg in medium size mixing bowl. Add brown sugar, beating well. Stir in melted butter, then stir in flour mixture.
    4. Pour batter in pan over sesame layer trying not to dislodge sesame bottom crust. (My batter was too thick to “pour” and I resorted to dolloping spoonfuls of it in place, then spreading carefully with a buttered knife. Tricky, but it worked.)
    5. Sprinkle remaining sesame seeds over top.
    6. Bake for 20 minutes. Cool in pan on wire rack; cut into 24 bars. Store in airtight container.
