Spiced Sesame Bar Cookies
Miniature chewy bars with a foreign and exotic flair make a special sweet with coffee or tea. Sesame seeds form a nut-like crust to bottom and top of the moist spicy bars. A little challenging to fill the pan without disturbing the bottom sesame layer, but a labor of love for a special occasion cookie. Ingredients
- 1/4 cup toasted sesame seeds, divided
- ½ cup sifted all purpose flour (or stir flour to aerate, then measure lightly)
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon allspice
- 1/4 teaspoon mace
- ½ teaspoon cinnamon
- 1 egg
- 3/4 cup brown sugar (I used brown sugar blend)
- 3 tablespoons butter, melted
Directions
- Set oven to 350 degrees F. Grease an 8" x 8" baking pan and sprinkle with ½ of the toasted sesame seeds.
- In small bowl mix together flour, salt, baking soda, allspice, mace and cinnamon.
- Beat egg in medium size mixing bowl. Add brown sugar, beating well. Stir in melted butter, then stir in flour mixture.
- Pour batter in pan over sesame layer trying not to dislodge sesame bottom crust. (My batter was too thick to “pour” and I resorted to dolloping spoonfuls of it in place, then spreading carefully with a buttered knife. Tricky, but it worked.)
- Sprinkle remaining sesame seeds over top.
- Bake for 20 minutes. Cool in pan on wire rack; cut into 24 bars. Store in airtight container.
