Spiced Cherry Tea

- 6-7 cups clean filtered water
- about 20-25 tart plump cherries, pitted
- 3-4 cardamom pods slightly blistered
- 1 tsp black pepper
- 2 inch piece ginger scrubbed and sliced
- 2-3 tsp organic honey or raw agave nectar, optional
Directions
- In a large sauce pan, add pitted cherries, ginger, peppercorns, cardamom with the water and bring it to a boil.
- Drop the heat to a gentle simmer and simmer the brew for 20-25 minutes.
- Take it off the heat and let it sit for 5 minutes, then strain through a tea strainer.
- Place a couple of pieces of mashed cherries in a cup and pour the tea over them. Serve as is or sweetened.
- This recipe also makes good iced tea. To make iced tea cool in the refrigerator add a bit more water and serve over crushed ice.
- Makes about 5 cups of tea.
