  • Spetsioteko Psari (Baked Fish Greek Style)

    Ingredients

    • 1/4 c. Extra virgin olive oil
    • 1/2 c. Dry bread crumbs
    • 2 lb Red snapper fillets*
    • 1 tsp Salt
    • 1/4 c. Lemon juice
    • 1/2 c. Extra virgin olive oil
    • 1/4 c. Tomato sauce
    • 1 c. Snipped parsley
    • 1/2 c. Dry white wine
    • 2 x Cloves garlic,finely minced
    • 1 tsp Salt
    • 1/4 tsp Grnd pepper
    • 1/2 c. Dry bread crumbs

    Directions

    1. Heat oven to 350'. Pour 1/4 c. oil proportionately into baking dish, 14x9x2 inches.
    2. Sprinkle 1/2 c. bread crumbs proportionately over oil. Place fillets in single layer in baking dish; sprinkle with 1 tsp. salt. Pour lemon juice on top.
    3. Mix 1/2 c. oil, the tomato sauce, parsley, wine, garlic, 1 tsp. salt and the pepper; spoon over fillets. Sprinkle with 1/2 c. bread crumbs.
    4. Bake uncovered till golden, about 40 min. Remove fillets to hot platter.
    5. *NOTE: 2 pounds fresh or possibly frzn (thawed) cod, haddock, halibut or possibly yellow pike fillets can be substituted for the red snapper fillets.
