Special Pansit Bihon may Hipon
A delicious tasting and fulfilling rice noodles that every Filipino enjoy! Ingredients
- 1/2 kilo pack pancit bihon noodles
- 1 cup cooked chicken breast, sliced thinly
- 1/2 cup cleaned shrimp, shelled and deveined
- 2 cups of chicken broth
- 1 med onion, pealed and sliced
- 3 cloves of garlic, minced
- 1/3 cup scallions, cut into pieces
- 2 cups cabbage, sliced into thin strips
- 1 med carrot, sliced into thin strips
- 3/4 cup celery, diced or kinchay
- 3 tablespoons soy sauce
- Salt and pepper to taste
- Canola oil
- 5 pieces of calamansi or 1 lemon, sliced
Directions
- Soak the pancit bihon noodles to soften for 10 minutes, set aside.
- Grease a large wok with canola oil.
- Sauté garlic and onions until golden brown then add the chicken breast and shrimp.
- Stir fry for a minute and all the vegetables, stir fry more.
- Add the broth, let it simmer until cooked.
- Remove about 1 cup of cooked veggies and set aside.
- Mix in the pancit bihon noodles and add the soy sauce, cook for about 5 minutes or until the noodles are tender, do not overcook.
- Add salt and pepper to taste.
- Transfer onto a serving platter and top with the veggies and slices of calamansi on the side.
