    For my last recipe this month, I once again dug into my old metal recipe box in search of something from my Russian/German grandma’s kitchen. When I think about visiting my grandma’s house as a child, the kitchen is always in my mind and generally she is there with her apron on, the flour bin open, kneading dough or cutting noodles. The woman made EVERYTHING by hand. I decided to give her spatzle/German noodle recipe a whirl. In all honesty I don’t remember what this looked like when she made it and my mother was more of a dumpling maker and not a “noodle” maker. When I googled what this particular dish was supposed to look like, the images ranged from dumpling, gnocchi to orzo looking noodles. Mine are decidedly more orzo-like in look and texture but they are certainly delicious! Thanks grandma for another wonderful recipe.

    Ingredients

    • 4 cups flour
    • 1 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 can (10 3/4 ounce) chicken broth
    • 4 eggs, slightly beaten
    • 1/4 cup milk
    • 1 tablespoon butter
    • bread crumbs

    Directions

    1. To make dough, in large bowl combine flour, salt and pepper. Blend in broth, eggs and milk. Add to flour mixture beating until bubbles form (about 2 minutes). To make the noodles, force dough through a large holed colander or place small amount of dough on the edge of a plate. Tilt the plate cutting off strands of dough into boiling salted water. Cook gently for 3-4 minutes or until they are all floating at the top. Rinse in cold water and drain. In skillet, melt butter and saute spatzle until it is browned slightly. Remove from pan and sprinkle lightly with bread crumbs. Makes 9 cups.
