Ever wondered how to get that perfect consistency of spanish rice that's served in restaurants? Here's the secret...

    Ingredients

    • 2 cups white rice
    • 2 tbsp olive oil
    • 1 tbsp fresh chopped garlic
    • 1/4 cup finely chopped onion
    • 2 tbsp finely chopped cilantro
    • 4-1/2 cups water

    Directions

    1. Heat the olive oil in large sauce pan.
    2. Saute uncooked rice, garlic, and onion in the heated oil. Stir frequently and do not allow to burn.
    3. When rice begins to brown, add water and cilantro and quickly bring to a boil.
    4. Reduce heat to a low simmer, cover, and cook for 15 minutes.
    5. Allow rice to sit for an additional 5 minutes.
    6. Fluff with a fork and serve.

Thanks. Try it out, and let me know how it goes. It does take a little practice to get the water and timing *exactly* right as even minor variations in the pan, the length of time you saute the rice, etc. will change the time it takes to fully cook. I'm just now getting the hang of it and I've been trying to learn how to cook rice for years LOL. But the secret to delicious rice is to work on that timing, and then you can *leave it alone* while it's cooking. If you have to lift the lid to take a peak... whatever you do, don't stir it. :-)
