    Ingredients

    • 2 TBSP olive oil
    • 1 medium onion, diced
    • 1 small green bell pepper, diced
    • 1 + TBSP minced garlic
    • 1 + TBSP chopped jalapeno
    • 1 lb. ground beef or ground chicken
    • 1 TBSP tomato paste
    • 1 TBSP chili powder
    • 1 tsp ground cumin
    • 1/2 tsp cinnamon
    • salt and pepper to taste
    • 2 cups chopped tomatoes or 1 14.5 oz can chopped tomatoes
    • 1/2 cup frozen corn, thawed
    • 1/2 cup black beans, rinsed
    • 1/4 cup chopped cilantro
    • 1 1/2 lb. sweet potatoes, peeled and cut into chunks
    • 2 TBSP butter
    • 1/2 cup milk

    Directions

    1. Place sweet potatoes in a saucepan with water to cover. Bring to a boil, reduce heat, simmer for 20 minutes. Drain; mash with butter and milk.
    2. Heat oil in a large pot over medium heat. Add onions and bell peppers; cook stirring for 10 minutes.Add garlic and jalapeno; cook for 2 minutes.
    3. Raise heat to medium high; add beef or chicken and brown for 5 minutes.
    4. Add tomato paste and spices; cook stirring for 2 minutes.
    5. Add tomatoes; simmer for 10 minutes.
    6. Add corn, beans and cilantro. Simmer for 5 more minutes.
    7. Spoon into a 9 x 9 inch baking dish.
    8. Spread mash over the meat mixture. Bake in a 400 degree oven until brown, 30 minutes.
