Southwestern Red Onion-Topped Potatoes
These savory potatoes would be delicious with any grilled main dish. Fresh, cilantro sparks the rich topping of cheese and onions. Ingredients
- 3 Large Baking Potatoes
- 1/4 Tsp. Salt
- 1/8 Tsp. Ground Black Pepper
- 1 Cup Queso Anejo
- 3/4 Cup Red Onion, Diced
- 1 Tbsp. Fresh Cilantro, Chopped
- 1 Clove Garlic, Minced
Directions
- Heat oven to 375°F. Bake potatoes until tender, about 1 hour.
- Cut potatoes lengthwise into halves; score top of each half crisscross fashion, being careful not to cut through skin. Sprinkle with salt and pepper.
- Mix remaining ingredients. Divide mixture among potatoes. Press into scores and on top of each potato. Bake until hot, about 5 minutes.
