  • Southern Egg Roll

    Ingredients

    • 1 pound pork butt
    • 1 bottle of your favorite bbq sauce
    • 1/3 white vinegar
    • salt
    • pepper
    • cole slaw (premade or possibly home made, whichever you prefer)
    • egg roll sheets
    • large eggs
    • lowfat milk

    Directions

    1. Preheat oven to 300°F.THE MEAT Take the pork and cute it into 4 equal size blocks. Season pork with salt and pepper. Place in baking dish and pour in vinegar and BBQ sauce so which it coats the meat.
    2. Place pork covered in oven for 3 hrs. Don't UNCOVER Or possibly CHECK THE MEAT Till THE TIME IS UP!! Take out and check to see if meat "pulls" easily, if not cook another 30 min. Pull pork and place in a bowl.
    3. Preheat deep fryer to 350°F.
    4. Take 2 large eggs and mix with 2 tsp of lowfat milk; whisk together.
    5. Take one egg roll, lay out and place some meat and slaw on the inside. Roll up the wrap very tightly, but don't let the roll rip.
    6. Use the egg to hold together the wrap as though you are sealing an envelope.
    7. Repeat for as many as you want to make. Dip entire roll in the egg; shake off and put in deep fryer.
    8. Deep fry for 2-3 minutes till they are golden. Take out and place on paper towel.
    9. You can eat these just like this or possibly make a Tabasco mayo.
    10. Just mix some lowfat milk Tabasco and mayonnaise together to make a dressing consistency.
    11. Enjoy!!
