  • Sour Cream Coffee Cake

    I worked with a friend to modify this recipe years ago until we got it just right! It's a brunch favorite.

    Ingredients

    • 1 ½ cup flour
    • ¾ cup sugar
    • 2 tsp. baking powder
    • ½ tsp. baking soda
    • ¼ tsp. salt
    • ¾ cup sour cream
    • 2 Tbsp. melted butter
    • 1 egg
    • 1 egg white
    • 1 tsp. vanilla

    Directions

    1. Lightly grease a 9 x 9 pan.
    2. Sift together the dry ingredients (through salt).
    3. Combine the remaining ingredients and beat well.
    4. Add the sifted ingredients to the cream mixture. Beat just until smooth. Batter will be very thick. Spread half the batter in the pan. Sprinkle 1/3 of streusel on batter. Pour on remainder of batter, and top with the rest of the streusel.
    5. Bake for ~40 min. at 350 (it’s done when a knife comes out clean).
