Sort of Uijstmijter

Slightly different and more filling than a plain sandwich plus no meat. Important as I wasnt eating meat at the time. Now I cant always get the ingredients I want to make a more authentic version and so was born my 'Sort of Uitsmijter' which is close to the Dutch original but not identical. Ingredients
- 2 slices Wholemeal Bread
- 2 thin slices Cheese
- 2 large organic or free range Eggs
- ½ tsp Yellow Mustard
- ½ tsp Crushed Red Chilli (Sambal Oelek)
- 1 portion [Minty Mustard Salad|http://experimentalchefs.com/minty-mustard-salad/]
- Sea Salt
- Grated Black Pepper
- 1-2 Tbsp Olive OIl
Directions
- Put the bread on to toast. Cook to your desired level of brown.
- Heat the oil in a fry pan. It should come to a suitable temperature just as the toast is finished.
- Put the toast onto a serving plate then break the two eggs into the fry pan. Keep the eggs apart but allow to begin cooking.
- While they cook, spread one slice of toast with the mustard and the other with the chillies. Top each piece of bread with sliced cheese.

- Once the white of the eggs has fully set then remove each from the pan and place one on each slice of toast.

- Spoon the Minty Mustard Salad onto the plate then sprinkle with salt and pepper to taste.
- Serve and enjoy.
