  • Soft Lemonade Cookies

    Ingredients

    • 1 cup butter, softened
    • 1 cup sugar
    • 2 eggs
    • 3 cups flour
    • 1 tsp baking soda
    • 1 can (6 oz.) frozen lemonade concentrate, thawed, divided
    • Additional sugar

    Directions

    1. In a large mixing bowl, cream the butter and sugar until light and fluffy.
    2. Add the eggs, one at a time
    3. Beat well after each addition
    4. Combine the flour and baking soda
    5. Add to the creamed mixture
    6. Alternate with 1/3 cup of the lemonade contrate
    7. Beat well after each addition
    8. Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets
    9. Bake at 400 for 8-10 minutes
    10. Remove to wire racks
    11. Brush the warm cookies with the remaining lemonade contrate
    12. Sprinkle with sugar
    13. Cool completely
