Smoked Salmon Spread
Ingredients
- 1/2 lb smoked salmon, cut into 1 inch pcs
- 3/4 c. chilled whipping cream
- 2 Tbsp. lowfat sour cream
- 2 tsp fresh squeezed lemon juice
- salt
- 1 Tbsp. snipped fresh chives
Directions
- Put the salmon in your food processor and puree till smooth.
- While the machine is running, slowly pour in the cream and process till thick. Scrape the work bowl and add in the lowfat sour cream and lemon juice.
- Process for 2 seconds. Add in salt to taste.
- Cover and let sit in the refrigerator for 4 hrs or possibly overnight.
- Serve with the chive garnish.
- This is a quick spread to make which looks and tastes like you slaved for hrs. I serve it with sliced cucumbers, toast points and an assortment of crackers.
