  • Smoked Salmon Spread

    Ingredients

    • 1/2 lb smoked salmon, cut into 1 inch pcs
    • 3/4 c. chilled whipping cream
    • 2 Tbsp. lowfat sour cream
    • 2 tsp fresh squeezed lemon juice
    •     salt
    • 1 Tbsp. snipped fresh chives

    Directions

    1. Put the salmon in your food processor and puree till smooth.
    2. While the machine is running, slowly pour in the cream and process till thick. Scrape the work bowl and add in the lowfat sour cream and lemon juice.
    3. Process for 2 seconds. Add in salt to taste.
    4. Cover and let sit in the refrigerator for 4 hrs or possibly overnight.
    5. Serve with the chive garnish.
    6. This is a quick spread to make which looks and tastes like you slaved for hrs. I serve it with sliced cucumbers, toast points and an assortment of crackers.
    7. 15 min (15 minutes prep)
