Smoked mackerel fishcakes
Very tasty and so #easy to make these #fishcakes make a comforting, #good-value #family meal. Ingredients
- 500 g potatoes, peeled, cut into large chunks
- 15 g butter
- 350 g smoked mackerel
- ½ lemon, juice and 1 tsp finely grated zest
- 2 tbs dill, chopped
- 1 tsp mustard
- ¼ tsp sea salt
- ½ tsp black pepper
- 1 tbs flour, for dusting
- 15 g butter, for frying
- 1½ tbs olive oil, for frying
- Horseradish and apple sauce:
- 150 ml sour cream
- 2 tsp cider vinegar
- ½ tsp mustard
- 1 tbs horseradish, grated or from a jar
- ½ apple, peeled, cored and grated
Directions
4.With wet hands form the mixture into eight cakes. Lightly dust with flour, place on a plate or tray and cover with clingfilm before refrigerating for 30 minutes to firm up (this makes the cakes easier to handle).5.Meanwhile gently combine sour cream with the rest of the ingredients.
