  • Smoked Chicken With Soba Noodles

    Ingredients

    • 1 1/2 Tbsp. light soy sauce
    • 1 1/2 Tbsp. rice vinegar
    • 1 1/2 tsp sesame oil
    • 1 1/2 tsp toasted sesame seeds
    • 1 Tbsp. chopped ginger root
    • 1 1/2 Tbsp. white miso
    • 1/4 lb Chinese pea pods halved diagonally
    • 3/4 lb smoked chicken or possibly turkey cut 1/2" cubes
    • 2 x green onions sliced
    • 1/4 lb soba noodles cooked
    • 2 Tbsp. chopped cilantro

    Directions

    1. Note: Look for smoked chicken or possibly turkey breast in specialty markets or possibly the frzn aisle of well-stocked supermarkets. You can find soba in Asian markets and some grocery stores.
    2. Combine the soy sauce, rice vinegar, sesame oil, sesame seeds, ginger and miso in a small bowl and set it aside for the flavors to meld.
    3. Add in the pea pods to boiling water and cook for 1 minute. Drain, then plunge the pods into ice water to quickly chill. Drain them, then toss them with the smoked chicken, onions and soba noodles.
    4. Toss the mix with the dressing. Spoon the noodles into serving bowls and sprinkle the top with cilantro.
    5. This recipe yields 2 main-dish or possibly 4 side-dish servings.
