  • Smoked Chicken Bbq Pizza

    Ingredients

    • 1 x Twelve-inch pizza dough see * Note
    • 2 x Boneless chicken breasts - (8 ounce ea)
    • 1 Tbsp. Extra virgin olive oil
    • 1 Tbsp. Emeril's Essence see * Note
    • 3 c. Ketchup
    • 1 c. Light brown sugar
    • 1/2 c. Worcestershire sauce
    • 2 Tbsp. Sesame oil
    • 2 ounce Molasses
    • 1 Tbsp. Chili pwdr
    • 1 Tbsp. Grnd mustard
    • 2 tsp Chopped garlic
    • 2 tsp Grated fresh ginger
    • 2 ounce Balsamic vinegar
    • 6 ounce Mozzarella cheese
    • 1 sm Red onion julienned
    • 1/4 c. Chiffonade of basil

    Directions

    1. Preheat the oven to 450 degrees. Place the baking stones in the oven. Preheat the grill.
    2. Season the chicken breast with extra virgin olive oil and Emeril's Essence. Place on the grill and cook for 5 to 6 min on each side. Remove from the grill and julienne.
    3. In a food processor, combine the ketchup, brown sugar, Worcestershire sauce, sesame oil, molasses, chili pwdr, grnd mustard, garlic, ginger, and balsamic vinegar. Puree till the sauce is smooth. Season with salt and pepper. Spoon the sauce over the dough. Layer the cheese over the sauce. Sprinkle the chicken, red onion, and basil over the cheese. Place in the oven and bake for 15 to 20 min, or possibly till the crust is golden. Remove the pizza from the oven.
    4. This recipe yields one 12-inch pizza.
