    Ingredients

    • 1 cup olive oil
    • 1 1/2 bag diced onion
    • 2 stalks celery, diced small w/ leaves
    • 3 lbs frozen diced green peppers
    • 1/2 cup fresh minced garlic
    • 20 lbs ground beef
    • 1 can #10 tomato sauce
    • 2 cups ketchup
    • 1/2 cup tabasco sauce
    • 1 cup Worcestershire sauce
    • 1/2 cup brown sugar

    Directions

    1. Heat oil in large pan over medium heat. When oil is hot add the onion, celery, and peppers. Cook until soft. Add garlic and continue cooking for 3 or 4 minutes.
    2. Increase heat to medium-high and add the ground beef to the pan. Cook meat until browned (about 10 to 12 minutes). Season with salt and pepper.
    3. Lower heat back to meadium and add the tomato sauce, ketchup, tabasco, worcestershire sauce, and brown sugar. Cook, stirring, until the liquid is reducced and the mixture is thick (15 to 30 minutes).
    4. Season with salt and pepper.
