    Stretch your beef and stretch your budget with this quick and tasty stovetop lasagna.

    Ingredients

    • 1/2 lb. lean ground beef
    • 1 small onion,finely chopped
    • 1/2 cup oatmeal
    • 2 cloves garlic, minced
    • 1/2 t dry oregano
    • 1/2 t salt
    • 1/4 t pepper
    • 1 15 1/2 oz. can low sodium tomato sauce
    • 4 cups broad noodles
    • 1 bag spinach
    • 1/4 cup fresh flat leaf parsley, chopped
    • 1 cup low fat cottage cheese
    • 1 cup shredded mozzarella cheese

    Directions

    1. Clean and chop spinach. Chop onion and garlic. In a dry skillet over medium heat stir the oatmeal until it is toasted and lightly browned. Add beef, onion and garlic. Stir until beef is browned. Add salt, pepper and oregano. Add dry noodles, spinach and tomato sauce and stir to coat. Cover tightly and cook on medium low for about 15 minutes until noodles are soft. Uncover and dot the top with cottage cheese and sprinkle with mozzarella. Cover and cook over medium low until cheese is melted.
