Skillet Baked Shrimp Omelet
Wonderful for brunch, lunch, dinner! A favorite here. Ingredients
- 6 eggs
- 2 tablespoons cream
- S & P, to taste
- Drizzling of Olive oil
- 8 ounces medium shrimp
- one lemon juice only
- 1 tablespoons melted butter
- Add any condiments you enjoy
Directions
- Pre Heat Oven 425 F
- Grease an iron skillet well
- In a mixing bowl add eggs and cream whisk well, add S & P
- In a separate saute pan add olive oil and butter on medium high heat, saute shrimp 3 minutes, remove from heat
- Bake the eggs until set, using an offset spatula loosen omelet and slide onto a plate, add shrimp to one half of baked omelet and fold over, add your favorite condiments, cut into triangles and enjoy
