  • Simple Vegetable Soup

    This is the tastiest way to clean out your fridge and keep your weight down! All sizes are approximate and all ingredients are optional. I usually use whatever I have at the time. Frozen works very well in this recipe and makes for very fast preparation! If you have a crock pot just combine all the ingredients. Organic vegetables produce much better flavors and usually cost only pennies more. To make this soup a filling meal you can add some seitan or brown rice and serve with some sprouted bread or rolls.

    Ingredients

    • 1 tsp Olive oil
    • 1 Onion
    • 1 Red Pepper
    • 1 Green Pepper
    • 1 head of Celery
    • 1 bag of Carrots
    • 1 green or yellow Squash
    • 1 medium Cabbage
    • 28oz can of tomatoes
    • 1 cup Black, Red or lentil beans
    • 1/4 cup Split Peas
    • Water
    • Salt and Pepper as desired

    Directions

    1. In large soup pot heat olive olive oil to coat bottom.
    2. Add chopped onion and let heat for a few minutes till translucent.
    3. Add chopped peppers and celery, beans and peas, large can of tomatoes in juice, and water and heat til boiling. Then add squash and cabbage. Simmer at least an hour to several hours.
    4. Cooks very quickly if you leave out the beans or cabbage, but those are my favorite parts.
    5. This will last about a week. This is a perfect recipe for extending too - just keep adding more ingredients and simmer every day!
