    Simple Roasted Tomato and Garlic Pasta

    The is the easiest, fresh pasta recipe. I made it one day when we had a lot of left over grape tomatoes. The whole family loved it!

    Ingredients

    • Spaghetti, Linguini or Angel Hair Pasta
    • 2 pints of grape or other small tomatoes
    • 3-4 cloves garlic (adjust depending on taste)
    • Olive oil
    • Salt (I prefer Kosher salt or sea salt)
    • Pepper

    Directions

    1. Heat oven to 425 degrees
    2. Cover a baking sheet (with sides) with foil. If you don't have a baking sheet with sides use a pyrex 9x13 pan.
    3. Rinse tomatoes and dry with paper towel.
    4. Pour tomatoes onto baking tray (covered w/ foil)
    5. Generously drizzle olive oil over tomatoes.
    6. Chop/dice garlic and sprinkle over tomatoes.
    7. Sprinkle salt and pepper over tomatoes
    8. Shake tray so tomatoes roll around and get covered in oil, garlic, salt and pepper.
    9. Put in oven.
    10. Roast for 20 minutes.
    11. Meanwhile, halfway into roasting tomatoes, cook pasta per directions so it's ready when tomatoes are finished roasting. Tomatoes can roast a bit longer if you turn down the temperate.
    12. Once tomatoes are done, there should be some juices on the tray from the tomatoes. You don't want to roast it all away. It's very flavorful and makes the sauce for the pasta.
    13. Combine pasta and tomatoes.
    14. Serve with parmesan cheese and a salad.

      I made this tonight for dinner. It was very easy and good. I added uncooked & cleaned shrimp to the roasting tomatoes about 5 minutes before they were to be finished. It all came together very nicely. Definitely will make this again.
