    Simple Cucumber and Tomato Salad

    This thinly sliced cucumber and tomato salad is fresh and delicious. Even the dressing is healthy. I usually serve it with my Chicken Biryani recipe. Enjoy!

    Ingredients

    • 7-8 persian cucumbers, unpeeled and thinly sliced (you can get these at Trader Joes. If you can't find them, use an English cucumber or regular cucumber, and peel in stripes, leaving half of the skin on)
    • 1 12 oz pgk sugar plum tomatoes, halved (or other small cherry tomatoes)
    • Dressing
    • 2/3 cup plain lowfat yogurt
    • 2 Tbsp chopped green onions
    • 2 tsp fresh lemon juice
    • 1/2 tsp ground cumin
    • 1/2 tsp Kosher or Sea salt (or 1/4 tsp regular salt)
    • 2 dashes, ground red pepper
    • Fresh ground black pepper to taste

    Directions

    1. Slice cucumbers and tomatoes
    2. Mix Dressing ingredients in a bowl.
    3. Add dressing to salad and toss until thoroughly coated.
    4. Serve alongside any spicy dish, such as my Chicken Biryani recipe.
