SILKY MUSTARD CHICKEN
This dish probably takes a while to cook, but is worth the effort.It may seem a bit too much effort cooking this dish,but when you are done and you serve it on top of a bed of hot steaming rice you'll have your family,friends and guests coming back for seconds. Ingredients
- 600 gm boneless chicken cut into pieces
- 1 tsp turmeric
- 1 lime
- 1 tsp salt
- 1/4 cup mustard
- 1 and half tsp mild curry powder
- 1/4 cup oil
- 2 tbsp each grated ginger and garlic
- 1 onion very finely chopped
- 1 tsp each cumin and coriander powders
- 1cup sweet plain yogurt(The yogurt should not be sour)
- 2 tbsp chopped coriander/flat leaf parsely for garnish
Directions
- Mix the chicken with the salt, turmeric, lime,curry powder and mustard and set aside for at least one hour.
- Heat the oil and add the ginger and garlic and onion and saute for five minutes.
- Add in the cumin-coriander powder with the chicken.
- On medium heat, keep cooking the chicken till all the water has evaporated and the chicken is well brown and sort of dry.This may take about 20-25 mins in total.
- Add in the yogurt with and simmer for 15 to 20 more minutes and serve hot with rice.If required add in just 1/4 to 1/2 cup warm water to the pan if the gravy seems too thick for your taste.This dish looks so silky and velvetty fresh and tastes amazing.
- Garnish with chopped coriander sprinkled all over.
- Serve hot with steaming rice.
