  • Shrimp Tortellini

    Very EASY, FAST & YUMMY recipe for the family! Serve with a caesar salad & garlic bread. Side note: Fresh spinach leaves (1-2 cups) can be substituted for the broccoli. Also, 2 boneless, skinless chicken breasts (diced & browned in a skillet) can be substituted for the shrimp.

    Ingredients

    • 1 lb unpeeled medium shrimp
    • 1 12 oz. package frozen tortellini, with cheese filling uncooked
    • 1/3 cup butter or margarine
    • 1/3 onion, minced
    • 1-2 cloves garlic, minced
    • 1 bunch broccoli, chopped
    • 1 tomato, diced
    • 1/2 cup grated parmesan cheese
    • 2 tablespoons chopped fresh basil or 2 teaspoons dried basil

    Directions

    1. Peel & devein shrimp and set aside. Cook the tortellini by following the package directions; drain and set aside. In a big skillet over medium-high heat, melt the butter. Add in the shrimp, onion, garlic, broccoli and basil. Saute/stir for about 5 minutes. Add tortellini, tomato and parmesan cheese; toss; season with salt and pepper if desired, then serve.
