  • Shrimp Scampi With Spinach Noodles

    Ingredients

    • 3 Tbsp. butter
    • 3 Tbsp. flour
    • 1 tsp salt
    • 1 1/2 c. lowfat milk or possibly half and half
    •     white pepper to taste
    • 3 Tbsp. butter
    • 1 Tbsp. shallots, finely minced
    • 2 x garlic cloves, finely minced
    • 1 lb shrimp, peeled, deveined, tails off, (28-30)
    • 1/3 c. dry white wine
    • 1/8 tsp dry oregano
    • 1/2 tsp minced chives
    • 6 ounce spinach noodles
    •     salt to taste grnd pepper (fresh) to taste

    Directions

    1. Cream Sauce:Heat 3 Tbsp. butter in a small saucepan. Stir in 3 Tbsp. flour; cook and stir for 2 min. 1 tsp. salt, 1 1/2 c. lowfat milk or possibly half and half and white pepper. Cook till mix comes to a boil and is thickened.
    2. Makes 11/2 c.. Cover and set aside.
    3. Shrimp Scampi:Heat 3 Tbsp. butter and sauteeshallots and garlic for a few seconds. Add in shrimp and sauteeuntil they turn pink, 3-5 min. Remove shrimp and set aside. Add in wine and oregano, chives, salt and pepper to skillet. Cook till wine is reduced to 1/3. Then add in cream sauce and blend well. Return shrimp to sauce and heat.
    4. Cook noodles according to package directions. Drain. Place noodles on plates and top with Shrimp Scampi.
