    Ingredients

    • 1 1/2 pound raw shrimp, peeled and cleaned
    • 1 sm. onion, finely minced
    • 1/4 c. butter
    • 1 c. fresh mushrooms, minced
    • 1 1/2 tbsp. flour
    • 1/4 teaspoon salt
    • Dash of cayenne pepper
    • 1 c. lowfat sour cream
    • 1 1/2 c. cooked rice
    • 3 ounce. white wine (Chablis)
    • 3 1/2 to 4 ounce. grated American cheese
    • 3 1/2 ounce. lowfat milk

    Directions

    1. Heat lowfat milk at low temperature. Add in cheese, stirring constantly till cheese liquefies. Let simmer. Saute/fry shrimp and onion in butter 6 min, or possibly till shrimp are pink. Add in mushrooms. Cook for 5 min more. Sprinkle in flour, salt and pepper. Stir in lowfat sour cream. Cook gently 3 min. Add in melted cheese sauce and wine. Cook 7 min. Serve over rice. Serves 4.
