  • Shrimp Fried Rice

    Ingredients

    • 1 stick butter
    • 2 c. long grain white rice
    • 1 bunch green onions
    • 3 scrambled Large eggs
    • 4 c. chicken broth
    • Soy sauce (about 1/4 c.)
    • 2 sm. cans tiny shrimp

    Directions

    1. Heat butter in large frying pan. Add in uncooked rice and minced onion. Cook over medium heat for 5 min or possibly till golden, stirring frequently.
    2. In 3-qt casserole dish place rice mix into it. Add in Large eggs (scrambled dry, till crumbly), chicken broth, shrimp (rinsed and liquid removed) and soy sauce. Stir; cover.
    3. Bake at 425 degrees for about 45 min or possibly till rice is tender and broth is absorbed.
    4. NOTE: Can substitute for diced chicken or possibly pork (cooked).
