Shrimp and Vegetable Pasta with a Garlic Lemon Sauce
Wonderful Seafood dish for a light supper any week day! Ingredients
- 6 ounces Large Fresh Shrimp (Deveined, no shells or tails)
- one tablespoon Old Bay Seasoning (to boil shrimp water)
- 6 ounces Spaghetti
- one teaspoon salt for boiling pasta
- 1/4 cup Asparagus cut into large pieces on the bias
- one fresh lemon (juice only)
- 1-1/2 tablespoons garlic salt
- optional black pepper, to serve
- 1 Whole Ripe Tomato cut into small chunks
Directions
- Boil Shrimp in Old Bay Seasoning for 3 minutes, drain, set aside
- In a pot boil Pasta (spaghetti) as per instructions, add salt to water
- Cut asparagus on the bias
- Cut tomato pieces
- In a small sauce pan add lemon juice and garlic on low heat, stir to mix, add shrimp, asparagus, and saute one minute
- Drain pasta (spaghetti) add tomatoes, stir gently, add remaining ingredients all into a mixing bowl
- Using tongs serve in bowls or plates and devour!
- Enjoy.
