  • Shortcut Chicken Parmesan

    This shortcut version of an Italian classic has all the flavor for a lot less work.

    Ingredients

    • ½ cup chopped onion
    • 2 tbsp. butter
    • 1 (15 oz.) can tomato sauce
    • 1/3 cup beer, chicken stock, or water
    • ½ tsp. dried oregano
    • ¼ tsp. salt
    • 1/8 tsp. pepper
    • 6 boneless, skinless chicken breasts
    • ¼ cup grated Parmesan cheese
    • ½ lb. angel hair or spaghetti noodles, prepared according to package directions (optional)

    Directions

    1. In a large skillet, sauté onion in butter over medium heat until translucent and tender.
    2. Add tomato sauce, beer, oregano, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened, stirring occasionally.
    3. Preheat oven to 375°F. Spray a 13x9 inch baking dish with cooking spray; place chicken breasts in prepared dish.
    4. Pour tomato mixture over chicken; sprinkle Parmesan cheese over all.
    5. Bake, uncovered, at 375° for 25-28 minutes or until chicken juices run clear. Serve with hot, cooked pasta.
