Shortcut Chicken Parmesan

- ½ cup chopped onion
- 2 tbsp. butter
- 1 (15 oz.) can tomato sauce
- 1/3 cup beer, chicken stock, or water
- ½ tsp. dried oregano
- ¼ tsp. salt
- 1/8 tsp. pepper
- 6 boneless, skinless chicken breasts
- ¼ cup grated Parmesan cheese
- ½ lb. angel hair or spaghetti noodles, prepared according to package directions (optional)
Directions
- In a large skillet, sauté onion in butter over medium heat until translucent and tender.
- Add tomato sauce, beer, oregano, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened, stirring occasionally.
- Preheat oven to 375°F. Spray a 13x9 inch baking dish with cooking spray; place chicken breasts in prepared dish.
- Pour tomato mixture over chicken; sprinkle Parmesan cheese over all.
- Bake, uncovered, at 375° for 25-28 minutes or until chicken juices run clear. Serve with hot, cooked pasta.
