Sesame Cookies with Peach Filling

- 195 g Tahini paste,
- 2 eggs,
- 5/6 cup brown sugar,
- 1/3 cup honey,
- 1 1/4 wholewheat flour,
- 2 tsp baking powder,
- 1 tsp ground cardamon,
- 50 g sesame seeds,
- 1 cup peach jam
- additional sesame seeds to coat
Directions
- ookies:
- 1. Preheat the oven to 325°F (160°C).
- 2. In a food processor mix sugar, Tahini and honey.
- 3. Add flour, baking powder, eggs, sesame seeds and cardamon. Mix well.
- 4. Line the baking sheet with parchment paper.
- 5. Shape the dough into walnut-sized balls. Roll each ball in sesame seeds.
- 6. Place the balls on a baking sheet, about 2,5 inches apart. Slightly flatten the dough.
- 7. Bake in preheated oven for 13 minutes. Let to cool completely.
- assemble:
- 1. Top half of the cookies with 1 tablespoon of peach jam.
- 2. Press the remaining cookies on top to make sandwiches.
