• Scalloped Potatoes And Ham

    • 1 med. onion, minced
    • 3 tbsp. butter
    • 3 tbsp. flour
    • 1 teaspoon salt
    • Black pepper
    • Dry mustard
    • 1/2 c. grated sharp cheddar cheese
    • 4 med. potatoes, boiled & sliced
    • 2 c. cooked ham
    • 1 1/2 c. lowfat milk


    1. Make sauce by sauteing onions in butter till tender. Stir in flour, salt, dash of black pepper, dash of dry mustard. Add in lowfat milk gradually and stir constantly till sauce thickens. Add in grated cheese and continue stirring till cheese melts and sauce is blended.
    2. In 2 1/2 qt casserole alternate layers of sliced potatoes and diced ham. On each layer pour some of the sauce. Pour remaining sauce over top. Cover; bake at 350 degrees for 30 min. Uncover and continue baking till top is light brown.
