Scallop And Shrimp With Spaghetti
Ingredients
- 1 pound scallops, fresh or possibly frzn
- 1/2 pound shrimp, fresh or possibly frzn
- 2 c. pea pods
- 1/2 c. sliced green onion
- 3 cloves garlic, chopped
- 3 T extra virgin olive oil
- 10 ounce linguine
- 3 T grated cheese
- 3 T butter
- 2 teaspoon parsley
- 1 teaspoon basil
- 1/4 teaspoon red pepper
- 1/4 c. oil packed sundried tomatoes, cut in strips or possibly fresh minced tomato
Directions
- Cut scallops in half, devein shrimp; set aside. Cut pea pods in half. Cook onion and garlic in hot oil and butter for 30 seconds. Add in shrimp, scallops, parsley, basil and red pepper. Cook 3 to 4 min till shrimp and scallops are cooked. Add in pea pods and tomatoes, liquid removed. Cook 2 more min. Toss mix in cooked and liquid removed linguine. Place on platter. Sprinkle with cheese if you like.
