    Say no to Spanx and yes to Cornmeal Crusted Tilapia!

    A slimmer way to eat fish :)

    Ingredients

    • 3 Tilapia fillets
    • 1/4 cup cornmeal
    • 1/3 cup flour
    • couple shakes of Paprika
    • couple shakes of Oregano
    • salt and pepper to taste
    • 1 egg, plus 1 teaspoon of water

    Directions

    1. In a pan heat some extra virgin olive oil. Don't pour a bath in there, we don't want our fish to swim. Just enough to coat the bottom of the fish. Whisk together egg and water for your egg wash in one bowl. In another bowl mix together cornmeal, flour and spices. Let your fish take a dip in the egg wash and then the dry mix. Coat well, repeat for the other fillets. Cook until you get a nice golden crust, flip and do the same on the other side. I served mine with brown rice, salsa and a nice salad.
