    This is a staple in bakeries of South India.As a kid I used to pack this with butter and ketchup brushed on the insides or just plain butter toasted.Here in New Zealand I make this whenever we all feel like having this spicy bread with hot coffee or Indian masala Tea.You can adjust the spice and heat as per your preference and taste.

    Ingredients

    • Plain flour-500gm
    • salt-10 gm
    • yeast-10 gm
    • sugar-10 gm
    • butter-40 gm
    • finely chopped mint leaves-2 tbs
    • finely chopped green chillis-4-6(this one is optional)
    • Warm water-300 ml
    • finely chopped coriander-2 tbsp
    • finely chopped fresh ginger-2 inch piece
    • black pepper powder-1/2 tsp

    Directions

    1. Soak yeast in 100 ml warm water along with a little sugar and keep aside.
    2. In the remaining 200 ml water,melt salt and sugar fully
    3. seive the flour twice
    4. Now mix the yeast mix and the salt-sugar water into this flour.
    5. Mix in the other ingredients too.
    6. Mix and make a dough and knead it for about 5 mins.
    7. Cover the dough with a thick muslin cloth and keep it aside for 1 hour or 1 1/2 hour till the dough becomes double in size.
    8. knead again for 2 mins and put this into a greased loaf tin and bake at 205 degree C for 25-30 mins.
