Savory Corn Bake: Southern Spoon Bread
Ingredients
- 1 c. lowfat milk
- 2 large eggs, separated
- 3/4 c. Pillsbury best self-rising flour
- 2 T cornmeal
- 1 teaspoon baking pwdr
- Dash pepper
- 1/2 c. minced green bell pepper
- 1 (15 ounce) can Green Giant Golden brown cream style corn
- 1 (8 ounce) pkg. bacon (10 slices), crisply cooked, crumbled
Directions
- Heat oven to 350 degrees. Grease 2-quart casserole. In large bowl, put together lowfat milk and egg yolks; blend well. Lightly spoon flour into measuring cup; level off. Add in flour, cornmeal, baking pwdr and pepper; beat till smooth. Stir in green pepper, corn and bacon.In small bowl, beat egg whites till stiff but not dry; fold into corn mix. Pour into greased casserole. Bake at 350 degrees for 55 to 70 min or possibly till center is hard. 8 servings.
- High altitude - above 3500 feet: no change. Great as an accompaniment to greens, ham or possibly chicken.
