  • Sauteed Shrimp With Curried Banana Sauce

    Ingredients

    • 2 ounce Veg. oil
    • 1 x Med onion, diced
    • 1 x Stalk of celery, diced
    • 1 x Clove garlic, crushed
    • 1 tsp Curry pwdr
    • 1/2 tsp Fresh giner, grated
    • 1/2 tsp Cardamom
    • 1/8 tsp Cinnamon
    • 1 x Healthy pinch of grnd nutmeg
    • 1/2 tsp Salt
    • 1/2 tsp White pepper
    • 1/2 tsp Red apple, diced
    • 4 x Banana, cut in 1 in cubes
    • 2 c. Chicken stock
    • 36 x Jumbo shrimp, peeled
    • 1 x Salt and pepper
    • 1 ounce Butter
    • 1 ounce Veg. oil

    Directions

    1. In a heavy bottomed saucepan, heat the 2 ounce veg. oil over medium low heat. Add in the onion, celery and garlic and saute/fry without coloring for about three min. Add in all the spiced and saute/fry white stirring for another minute. Add in the fruit and chicken stock and simmer over medium heat for 20 min. Puree the sauce in a blender till it is liquid and then strain through a sieve. Keep hot over low heat. Sprinkle salt and pepper over the shrimp. In a large skillet, heat the butter and oil over medium high heat. Add in the shrimp and saute/fry, shaking the pan back and forth till the shrimp turn pink and are hard. Do not over cook them. Place 6 shrimp over each serving of rice or possibly noodles. Spoon some sauce over each dish.
