Sauteed Shrimp With Curried Banana Sauce
Ingredients
- 2 ounce Veg. oil
- 1 x Med onion, diced
- 1 x Stalk of celery, diced
- 1 x Clove garlic, crushed
- 1 tsp Curry pwdr
- 1/2 tsp Fresh giner, grated
- 1/2 tsp Cardamom
- 1/8 tsp Cinnamon
- 1 x Healthy pinch of grnd nutmeg
- 1/2 tsp Salt
- 1/2 tsp White pepper
- 1/2 tsp Red apple, diced
- 4 x Banana, cut in 1 in cubes
- 2 c. Chicken stock
- 36 x Jumbo shrimp, peeled
- 1 x Salt and pepper
- 1 ounce Butter
- 1 ounce Veg. oil
Directions
- In a heavy bottomed saucepan, heat the 2 ounce veg. oil over medium low heat. Add in the onion, celery and garlic and saute/fry without coloring for about three min. Add in all the spiced and saute/fry white stirring for another minute. Add in the fruit and chicken stock and simmer over medium heat for 20 min. Puree the sauce in a blender till it is liquid and then strain through a sieve. Keep hot over low heat. Sprinkle salt and pepper over the shrimp. In a large skillet, heat the butter and oil over medium high heat. Add in the shrimp and saute/fry, shaking the pan back and forth till the shrimp turn pink and are hard. Do not over cook them. Place 6 shrimp over each serving of rice or possibly noodles. Spoon some sauce over each dish.
