    Sauteed Brocolli Rabe, Collard Greens, or Kale

    This is an easy and tasty preparation for any slightly bitter green. Be careful with the salt. It can easily get too salty!

    Ingredients

    • 2 Tbsp olive oil
    • 4 garlic cloves minced
    • 2 bunches broccoli rabe, collard greens or kale, stemmed and chopped
    • 2 teaspoons rice vinegar
    • Seasoning salt and freshly ground pepper to taste

    Directions

    1. In a skillet, heat oil over medium heat. Add garlic and saute 30 seconds till translucent.
    2. Increase to Med-high and add the greens. Toss with tongs until wilted (3-4 min for Rabe or Collards, 5-6 minutes for Kale). Add vinegar, salt and pepper. Taste and adjust. Serve immediately.
