Sausage Breakfast Casserole
Prep: 20 min Cook: 35 min Servings: 6by Carolinaheartstrings301 recipes>We love a good casserole at our house and since we are cooking up classic casseroles this month, the first one that came to my mind was a breakfast casserole. We love breakfast for dinner and this delicious casserole is the perfect meal for either dinner or breakfast. I made a smaller version, but if you are feeding a crowd, just double the ingredients and it will make a 9 x 13 inch casserole. Ingredients
- 1 package pork sausage (12 ounce)
- 1/2 cup bell pepper, chopped
- 1/4 cup onion, chopped
- 1 1/2 cups frozen hash browns
- 1 cup Cheddar cheese, shredded
- 1/2 cup Bisquick mix
- 1 cup milk
- 1/4 teaspoon pepper
- 2 eggs
Directions
- Heat oven to 400 degrees. Grease a rectangular baking dish (11 x 7 inch). Cook sausage, peppers and onion until sausage is no longer pink, remove from heat and drain. Mix together the sausage, potatoes and 1/2 cup of the cheese and put it in the casserole dish. (The potatoes do not need to be thawed, just break them up a bit with a fork before mixing.)
- Mix together the Bisquick, milk, pepper and eggs. Pour over the sausage and potato mixture. Bake uncovered for approximately 30 minutes. Remove from oven and top with the remaining 1/2 cup cheese. Bake for 2 minutes longer. Cool for 5 minutes before serving. (If you double the recipe and use a bigger dish, you will have to adjust your baking time to approximately 40 minutes.) Makes 6 servings.
