    Fabulous fish stick ever!

    Ingredients

    • 200gm homemade fish paste/white fish fillet
    • 200gm ground chicken meat
    • 100gm grated coconut/desiccated coconut
    • 4 bird-eye chilies, roughly chopped
    • 3 shallots, chopped finely
    • 2 tbsp ground fresh ginger
    • 3 kaffier lime leaves, sliced finely (optional)
    • 2 tbsp brown sugar
    • 1 tspn salt
    • 1 tspn cumin powder
    • 1 tspn turmeric powder
    • 1 tspn crashed black peppercorn
    • 1 tbsn vegetarian oyster sauce
    • 8-10 lemongrass stalks (to use as skewer)

    Directions

    1. combine all ingredients together and mixed well.
    2. clean lemongrass stalk and get them trim nicely.
    3. mould one or two tablespoon of the mixture around a lemongrass stalk.(as shown as follow)
    4. pan fried over low heat or grill over a charcoal fire untill golden brown.
    5. serve warm with turmeric rice or pineapple rice

      This sounds fantastic, Kristy! How do you make the fish paste? Do you just pound the fish or puree it in a blender? Also..what goes into turmeric rice? Is it just rice steamed with some turmeric mixed in for color/flavor? Awesome stuff!
      Oh...and do you think a normal red chili pepper will work as a substitute for the bird eye chiles?

        HI John, you're right about the fish paste. You can do either way but with chopper not blender. ^_^ Or you may also check out the details from my link(I'll put up the link after this). It will link to my other fish paste posting with pictures.
        For the turmeric rice, I'll get you the link as well after this. As for the bird eyes chiilies. the best is to replace it with Jalapeno chili. It won;t be the same if the spiciness isn't there. Thank you so much for visiting. Hope you're having a wonderful day.
