Santa Fe Tilapia
Ingredients
- 2 uncooked tilapia fillets
- toni chachere's creole seasoning
- salt and pepper
- about 1/3 C philadelphia cooking cream sante fe blend
- 1 Pkg frozen corn mexican blend (or just add some chopped red and green peppers and onions to your corn)
- 1 can of black beans rinsed and drained
- 2 C cooked rice (white or brown)
Directions
- Heat up indoor grill on high, spray with cooking spray so your fish don't stick.
- salt and pepper tilapia sprinkle on some tony chachere's seasoning (a little goes a long way)
- place on grill about 6-7 min on each side depending on thickness of fillets
- place corn, black beans and cooking cream in pan heat on stove over med-high heat until well heated
- place 1 cup of rice on plate, place grilled tilapia fillet onto of rice and spoon the corn mixture ontop of fillet
- good served with some steamed broccoli and squash mmmmmm,,,
