  • Salted branzino fish

    Ingredients

    • 1,5 kg salt big
    • 5 large egg whites
    • 2 whole sea bass 500 gr
    • 8 sprigs fresh parsley
    • 2 sprigs fresh thyme
    • 4 thin slices of lemon

    Directions

    1. Preheat the oven to 200C. Mix salt and 5 egg whites in a large bowl, adding more egg whites if necessary to form a granular paste. Press a 1/4 inch layer of salt mixture (large enough to hold both fish) on a baking pan with large edges. Fill the cavity of each whole fish with half of the sprigs of herbs and lemon slices.
    2. Put the fish over the salt mixture on the pan. Pack the remaining salt mixture on the fish to enclose it completely. Roast until the thermometer is inserted into the thickest part of the fish to a temperature of about 20 minutes. Let stand for 10 minutes.
