  • Salmon With Arugula, Tomato And Caper Sauce

    Ingredients

    • 1 lb plum tomatoes seeded, minced
    • 3/4 c. minced fresh arugula - (lightly packed)
    •     (or possibly basil or possibly Italian parsley)
    • 1/2 c. extra virgin olive oil
    • 1 x shallot minced
    • 1 1/2 Tbsp. fresh lemon juice
    • 1 Tbsp. liquid removed capers
    •     Salt to taste
    •     Freshly-grnd black pepper to taste
    • 4 x salmon fillets - (6 ounce ea)
    •     Extra virgin olive oil as needed
    •     Lemon wedges for garnish

    Directions

    1. Combine first 6 ingredients in medium bowl. Season with salt and pepper.
    2. Preheat broiler. Brush both sides of salmon with oil; season with salt and pepper. Broil without turning till just cooked through, about 4 min. Transfer salmon to plates. Spoon tomato mix over. Garnish with lemon wedges.
    3. This recipe yields 4 servings.
    4. Comments: Start with grilled country bread spread with olive paste, or possibly olivada, available at Italian markets, specialty foods stores and some supermarkets. Or possibly puree pitted, black, brine-cured extra virgin olive oil in a processor.
