Salmon With Arugula, Tomato And Caper Sauce
Ingredients
- 1 lb plum tomatoes seeded, minced
- 3/4 c. minced fresh arugula - (lightly packed)
- (or possibly basil or possibly Italian parsley)
- 1/2 c. extra virgin olive oil
- 1 x shallot minced
- 1 1/2 Tbsp. fresh lemon juice
- 1 Tbsp. liquid removed capers
- Salt to taste
- Freshly-grnd black pepper to taste
- 4 x salmon fillets - (6 ounce ea)
- Extra virgin olive oil as needed
- Lemon wedges for garnish
Directions
- Combine first 6 ingredients in medium bowl. Season with salt and pepper.
- Preheat broiler. Brush both sides of salmon with oil; season with salt and pepper. Broil without turning till just cooked through, about 4 min. Transfer salmon to plates. Spoon tomato mix over. Garnish with lemon wedges.
- This recipe yields 4 servings.
- Comments: Start with grilled country bread spread with olive paste, or possibly olivada, available at Italian markets, specialty foods stores and some supermarkets. Or possibly puree pitted, black, brine-cured extra virgin olive oil in a processor.
