Salmon Baked In Potato Shells
Ingredients
- 1 pound canned salmon
- 8 med. baked potatoes
- 1/2 c. lowfat milk
- 1 minced onion
- Salt
- Pepper
- 1 c. bread crumbs
- 2 tbsp. butter
Directions
- Flake salmon removing all skin and bones. Slice off tops of potatoes and scoop out contents. Mash thoroughly, adding lowfat milk, onion and seasonings to taste. Add in salmon. Mix lightly. Stuff mix in potato shells. Cover with crumbs. Dot with butter. Bake in 400 degree oven, 25 min. Serves 6 to 8.
