  • Salmon And Red Pepper Pasta

    Ingredients

    • 1/2 lb salmon fillet skinned & boned
    • 3 x gloves garlic chopped
    • 2 Tbsp. parsley minced
    • 1 Tbsp. extra virgin olive oil divided
    • 3 Tbsp. lemon juice fresh (divided)
    • 3 x red bell pepper sliced into strips
    • 1/4 c. basil leaves fresh, minced
    • 6 x scallions diced
    • 6 c. fettucine cooked
    • 2 Tbsp. parmesan cheese grated

    Directions

    1. Cut salmon into small thin slices. Marinate salmon, garlic, and parsley together with 1 tsp. of extra virgin olive oil and 2 tablesppons of lemon juice.
    2. Toss red pepper strips with basil leaves.
    3. Boil water for pasta. Saute/fry red peppers and scallions in the other 2 teaspons of extra virgin olive oil for 1-2 min till scallions are softened. Begin cooking fettuccine. Add in salmon to the peppers and continue cooking another 1-2 min till fish is just done. Don't let salmon overcook adn become dry. Season with pepper and the other Tbsp. of lemon juice. Add in the cooked futtuccine and mix all together in hot serving dish. Sprinkle with Parmesan cheese.
    4. NOTES : You can substitute 2 tsp of dry basil for the fresh basil leaves.
